Cold or hot, this is a quick way to increase alertness while making your mouth water. Is it a drink or an ice-cream? You decide!

Ingredients

For the top

  • 30ml instant coffee
  • 30ml granulated sugar
  • 30ml boiling water

For the bottom

  • 100ml whole milk (hot or cold)
  • 3 ice cubes (optional)

This recipe makes two coffees so scale accordingly.

Personally, I drink the coffee hot (by adding the milk to an aerocchino) but equally works with cold milk straight from the fridge.

Step by Step Instructions

Step 1

In a mixing bowl, add the sugar, coffee and boiling water and mix well with a whisk or hand blender until the mixture lightens in colour and forms stiff peaks like a meringue.

Step 2

In a tall coffee glass, add the milk hot (from a pan or aeroccino) or cold (with ice cubes).

Step 3

Spoon the coffee mixture over the milk to form a swirl and server with a straw (cold) or biscotti (hot).
